The bottler Phil & Simon Thompson bottled this Caol Ila, a 10 year old, at 52.7%. A coastal smoke runs to lemon, olive oil and a peppery lift. It is the most independently bottled of all the Islay malts. It is Diageo’s largest Islay distillery by some way. Its tall stills give a lighter, cleaner island spirit. This is an east coast Islay single malt of real charm.

Description
This Caol Ila was bottled by the bottler Phil & Simon Thompson, a 10 year old, distilled in 2011, bottled at 52.7%, one of 328 bottles. Caol Ila sits on the shore at Port Askaig, on the narrow Sound of Islay. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
Worked from peated barley through the distillery's tall stills, building the elegant Islay smoke at its heart. It rested in ex-Bourbon oak, the wood adding only a light vanilla. Across the integration years the smoke loses its edge as esters and vanillin weave into a smoother, citrussy whole. Long ageing turns the young, sharp peat into a soft, coastal smoke. Phenols from the peat smoke carry the medicinal, lemony edge through the years. A gentle vanillin sweetness from the oak balances the coastal phenols. Time in oak deepens the oily body while the maritime smoke stays bright.
Undiluted at 52.7%, it is powerful. Wood smoke, lemon zest and brine, with a quiet vanilla under the smoke. Soft smoke and citrus sit behind the cask. The smoke fades slow over citrus and a mineral tang. This is the smoky malt of the Sound of Islay.
