Description
A Caol Ila drawn by the bottler Svenska Eldvatten, distilled in 2011, from cask SE134, bottled at 59.1%, one of 134 bottles. Caol Ila is among the most widely traded of Islay's single malts. Malt comes from the Port Ellen maltings on the south of the island.
The spirit was made from medium peated malt for a clean, smoky spirit, for a smoky spirit with a citrus lift. An American oak hogshead added vanilla and a light toffee. In integration the oak lactones (coconut) and vanillin (vanilla) knit with the phenols, the whole growing rounder and oilier. The make balances phenolic smoke against a bright, oily citrus. Its peated character is built on malt smoked to a medium level of phenols. Sea air works into the maturing casks, lending a briny, coastal lift. A gentle vanillin sweetness from the oak balances the coastal phenols. The six tall stills sit behind picture windows looking out to Jura.
Undiluted at 59.1%, it is powerful. Sea spray, smoke and a citrus lift, with a gentle oak sweetness beneath. It is clean and coastal, the peat and lemon to the fore. The finish runs oily, smoky and clean. This is the smoky malt of the Sound of Islay.
