    The Italian bottler Wilson and Morgan bottled this Caol Ila, a 10 year old, distilled in 2010, from cask 323394-323395, bottled at 60.1%, one of 548 bottles. Caol Ila is an Islay malt of clean, oily, citrus driven smoke. A ferry crosses the Sound from Port Askaig to Jura and the mainland.

    The spirit was worked from peated malt for the lighter Islay style, for the light, maritime smoke Caol Ila is known for. Years in ex-Bourbon wood lent a soft vanilla and a coastal calm. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays. The peat here is medium rather than heavy, so fruit and smoke share the glass. The clean, lemony smoke has made it a favourite of blenders for generations.

    At 60.1%, undiluted, it is bold and clean. Smoked lemon, brine and a green olive note, with vanilla and a honeyed edge from the cask. An oily smoke coats the palate, citrus and brine behind. The finish is clean, smoky and maritime. This is a lemony, coastal Islay single malt.
