Description
Cantina Giardino Paski comes from the family project of Antonio and Daniela de Gruttola in Campania, southern Italy, who focus on recovering old vineyards, native varieties and natural winemaking. The wine is made from old-vine Coda di Volpe, a local white grape grown in the volcanic interior of the region, where the warm days and cool nights of altitude keep the fruit fresh and the volcanic soils lend a savoury mineral edge. Farming is organic and the winemaking natural, with minimal intervention. The Coda di Volpe is fermented and macerated on its skins, then aged in wood. The skin contact extracts phenolics and tannin that give the wine grip and texture, while the time in barrel allows gentle oxygen exchange that builds a savoury, nutty, oxidative complexity rather than fresh primary fruit. It is vegan. The colour is golden amber. The nose shows apricot, orange peel, dried herbs and beeswax, with roasted nuts and a honeyed note. The palate is dry and textured, the volcanic acidity holding the skin grip and stone fruit through an earthy, savoury finish. Serve at 12 to 14 degrees in a wide glass.
