Description
Cantina Giardino Le Fole is a natural red from Antonio and Daniela De Gruttola in Campania, southern Italy, made in the old style with local varieties and no added winemaking products. It is produced from Aglianico, the region's great structured black grape, a late-ripening variety high in tannin and acidity that gives deep, ageworthy wines. The couple farm organically and work with minimal intervention, fermenting with native yeasts and keeping additions to a minimum, so the wine reflects its volcanic Campanian origin. It is aged for twenty-four months in oak barrels, a long maturation that resolves Aglianico's tannins and adds savoury complexity without covering the fruit. Expect a deep garnet colour, a nose of plum, dried cherry, leather and tobacco with an earthy edge, and a full, firm palate driven by grainy tannins and bright acidity, closing on a long savoury finish. This is a red built for the table. Serve at 17 degrees and decant an hour ahead. It suits braised beef, roast lamb and mushroom dishes.
