AT Roca is Agustí Torelló Sibill’s Penedès project, and this organic white is single varietal Xarel·lo from old vines. Fermented and held eight months in separate barrels, it is rounder than most, with white peach, pear and a nutty, waxy depth.

Description
AT Roca is the family project Agustí Torelló Sibill began in 2012 after years at Agustí Torelló Mata, built around the old vines and varied terroirs of Penedès. Xarel·lo is Catalonia's signature white grape, best known from Cava, and here it is bottled still and organic to show the variety on its own terms. The vines are farmed across several Penedès plots and vinified at Can Bonastre in Masquefa. Xarel·lo naturally carries firm acidity and a resinous, slightly waxy character, and eight months in separate wooden containers softens that edge, adding texture through contact with the lees while the barrel allows a slow, gentle oxygen exchange that broadens the mid palate without heavy oak flavour. The wine is pale gold. The nose leads with white peach and pear, backed by beeswax, almond and a touch of white flowers. The palate is dry and textured, with the grape's characteristic grip and a saline, citrus peel finish that keeps it fresh despite the extra weight. Serve at 10 to 12 degrees in a full white glass.

Additional information
Good with roast chicken, grilled hake and pork loin, where its texture and acidity hold up to richer cooking. The nutty, waxy depth also flatters aged Manchego and other hard sheep cheeses.
