Canero Sauternes Finish is a Dominican column-still rum given a finishing period in Sauternes casks, and the sweet dessert-wine character of that cask defines the whole bottling. Molasses-based and matured in the soft Spanish idiom, it comes across as a gentle, fruit-forward pour built around the cask rather than the spirit.

The nose offers peaches, honey, vanilla and a floral rose note, the palate is all ripe peach, yellow fruit and mild sweetness, and the finish stays sweet with honey, plum and sugar. Wood barely registers; this is about lush, peachy Sauternes sweetness rather than oak or structure.
