Tomeu Llabres revives near extinct Mallorcan grapes from his garage winery, and this wine features the rediscovered Escursac. Made in stainless steel with four months on its lees, it is a fresh, light red with red berries, herbs and a saline, island character.

Description
Since 2012 Tomeu Llabres has worked to restore forgotten vineyards and grape varieties in D.O. Binissalem on Mallorca, making his wines in a garage cellar. This red is built around Escursac, an indigenous Mallorcan variety rediscovered at the turn of the century and rarely seen elsewhere. The vines grow on the limestone and clay soils of the island interior, in a warm Mediterranean climate tempered by sea breezes that help retain freshness. The wine is fermented and aged in stainless steel to keep the fruit clean and unmarked by oak, then held for four months on its lees. This lees contact releases mannoproteins that add a subtle roundness and texture to the palate while preserving the wine's freshness. The colour is a bright, light red. The nose is fresh and lifted, with red berries, cherry, dried herbs and a floral note. The palate is light and juicy, with crunchy red fruit, fine tannin, bright acidity and a saline, mineral finish that reflects the island setting. At 12.5 percent it is a wine to drink young and slightly cool. Serve at around 14 degrees. It suits lighter dishes, poultry and fish.
