Ca’n Verdura is Tomeu Llabrés’s small Mallorca project, and this Supernova Moll is made from the island’s native Premsal Blanc in D.O. Binissalem. Five months on lees in steel gives a fresh Mediterranean white of fennel, anise, fresh herbs and citrus.
Description
Ca'n Verdura Viticultors is the personal project Tomeu Llabrés began in 2012 in a small garage in Binissalem, Mallorca, after training as an oenologist and learning the island's native varieties. Supernova Moll is made from Premsal Blanc, known locally as Moll, a Balearic grape suited to the warm, dry Mediterranean climate of D.O. Binissalem, where sea influence and cooler nights help hold acidity. The wine is fermented in stainless steel and aged five months on its lees in tank. Lees ageing, the practice of keeping the wine in contact with spent yeast cells, adds a subtle roundness and texture on the palate while the steel keeps the fruit fresh and the aromatics clean. The colour is pale lemon. The nose is herbal and expressive, with fennel, aniseed and fresh Mediterranean herbs over green apple and white flowers. The palate is dry and fresh, with citrus and orchard fruit, a light saline note and the gentle weight the lees contact provides. The finish is clean and savoury. Serve chilled at around 9 to 10 degrees. It suits grilled fish, seafood and lighter poultry dishes.
