Ca’n Verdura is Tomeu Llabrés’s small Mallorcan winery in Binissalem. Supernova showcases the island’s native Manto Negro, aged thirteen months in large French oak, with ripe cherry, Mediterranean herbs and a warm, savoury character true to its place.

Ca'n Verdura Viticultors is the personal project of Tomeu Llabrés, started in 2012 in a small garage in Binissalem on Mallorca. After training as an oenologist and learning the island's native grapes alongside Francesc Grimalt, then completing his education in Priorat, he set out to make wines that reflect the Balearic terroir. Supernova is made from Manto Negro, the signature red grape of D.O. Binissalem Mallorca. The vineyards sit on the island's limestone and clay soils under a warm Mediterranean climate, with the moderating influence of the sea keeping the fruit fresh. Manto Negro ripens to a medium body with soft tannins, and its aromatics carry the wild herbs of the surrounding scrubland. The wine is aged for thirteen months in 500-litre French oak barrels. The larger format means less wood contact per litre, so the oak adds structure and a light spice without covering the fruit, while slow oxygen exchange rounds the tannins. It pours a bright ruby colour, with a nose of ripe cherry, red berries, dried Mediterranean herbs and a peppery, earthy note. The palate is medium bodied and warm, with supple tannins and a savoury finish. Serve at 16 to 17 degrees. It suits roast lamb, grilled pork and hard cheeses.
