Can Rich farms organically on Ibiza in the Balearic Islands and has worked since 2013 with the island council to recover native grape varieties, some almost lost since Phoenician times. This white blends the aromatic Malvasía and Moscatel de Grano Menudo with other local white grapes, grown in a warm Mediterranean island climate tempered by sea breezes on limestone influenced soils. It is made in a young, fresh style with no oak. A cool fermentation in stainless steel and early bottling protect the primary aromatics and the fruit, keeping the wine bright and direct, and the modest 12 percent alcohol reflects picking for freshness. The wine is pale straw. The nose is expressive, led by white flowers and elderflower with white peach, pear and citrus, and a faint melon note. The palate is dry, light and fresh, the aromatic fruit carried by clean acidity to a crisp finish. This is a wine to drink young and well chilled. Serve at around 8C in a white glass.
