Description
Can Rich is a pioneer of organic viticulture on Ibiza, farming Monastrell near the Ses Salines Natural Park where the land meets the sea. The vineyards sit on light, salt-influenced soils under strong Mediterranean sun, and the coastal setting carries sea air through the rows, which lends the fruit a saline edge and keeps the picking early to hold acidity. The rosé is made by direct press of Monastrell, a thick-skinned variety that gives colour and red fruit quickly, then fermented cool in stainless steel to protect the primary aromatics and avoid extracting tannin. The result is pale salmon in the glass, with a nose of wild strawberry, cherry and white peach over white flowers. The palate is dry and fresh, the warm-climate fruit balanced by a brisk line of acidity and a faintly salty finish that reflects the surrounding salt flats. There is no oak here, so the wine stays direct and fruit led. Serve well chilled at 8 to 10 degrees as an aperitif, or alongside grilled prawns, fried fish and fresh summer salads.
