Can Ràfols dels Caus sits on the Garraf massif in the Penedès, where Carlos Esteva revived a 16th century farmhouse and replanted the estate organically, building a cellar within the limestone rock itself. This wine champions Sumoll, a native Catalan variety with naturally high acidity and pale colour that fell out of fashion before growers recognised its freshness and sense of place. The vines grow on poor, stony limestone soils that restrict yields and concentrate aroma. The 2024 is aged for just four months in chestnut barrels rather than oak, a softer, more neutral wood that lends gentle structure while keeping the fruit bright and the alcohol modest at 12.5 percent. The colour is pale ruby. The nose is perfumed, with fresh red berry, cherry and floral rose, lifted by an earthy, savoury minerality from the limestone. The palate is light and fresh, with fine tannin, crisp acidity and a clean, savoury finish. Serve lightly chilled at around 14 to 15 degrees. It suits roast chicken, pork and grilled vegetables.
