Description
Can Descregut Vinomi is made by Marc Milà and Arantxa De Cara in the Penedès, a project built on organic farming, biodiversity and native Catalan grapes. The wine is a blend of Xarel·lo and Xarel·lo Vermell, the latter a very rare pink-skinned mutation of the variety that the pair have helped to preserve. The wine is natural, organic and suitable for vegans. Xarel·lo is the backbone of Penedès whites, valued for its structure, its slightly waxy, herbal character and its ability to hold acidity, while the old Vermell mutation adds aromatic detail and a savoury note. The wine is aged four months on its lees in stainless steel, with no oak. The lees contact softens the wine and lends a subtle creaminess and a light bready note, while the tank keeps the fruit fresh and the wine bright. Minimal intervention in the cellar lets the fruit and the calcareous Penedès soils show clearly. Expect a pale straw colour, a nose of green apple, lemon and white flowers, and a dry, taut palate with pear, thyme, a light savoury texture and a saline finish. Serve chilled at 8 to 10 degrees.
