Description
Equilibri is made by Celler Can Descregut in the Penedès from single variety Xarel·lo, the region's most characterful white grape. The fruit comes from organic vineyards certified by the CCPAE, the Catalan organic body, farmed with minimal intervention. Xarel·lo is prized for its structure and its ability to age, and here that potential is developed through nine months in 300 litre French Allier oak barrels. The barrel ageing does two things: slow oxygen exchange through the wood softens the wine and deepens its colour, while extended lees contact in barrel builds a creamy texture and a savoury, nutty complexity. The oak also contributes gentle vanilla and spice without dominating the fruit. The colour is deep gold. The nose combines green apple and pear with vanilla, toasted almond and a touch of honey, backed by a chamomile note. The palate is dry and textured, with the barrel weight balanced by Xarel·lo's firm acidity, closing long and savoury. The winemaking is natural, organic and vegan. Serve at 11 to 12 degrees in a broad glass.
