Description
Cellers Can Blau was set up in 2003 by the Gil family at El Molar in the D.O. Montsant, part of the Orowines group. Montsant rings the Priorat and shares much of its character, with a Mediterranean climate carrying a continental edge, where mountains block the maritime influence and create a wide swing between hot days and cold nights. That diurnal range ripens the fruit fully while preserving acidity and aromatic detail. The blend draws on old vine Cariñena and Garnacha alongside Syrah, planted on the poor schist and slate soils that force the roots deep and lend the wine its mineral grip. The wine is aged for nine months in French oak, enough to round the tannin and add a measured spice frame while the ripe fruit holds the centre. Expect a deep, saturated ruby colour, a nose of ripe blackberry, plum and red berries with mineral and peppery notes, and a full bodied palate that is concentrated and warming with firm tannin, a savoury earthiness and a dark chocolate and liquorice finish. Serve at 17 to 18 degrees and decant ahead. It suits hearty roast and grilled meat.
