Oltresogno is a varietal Cabernet Sauvignon from Campo Alle Comete in the Tuscan Maremma, the land that launched the Super Tuscans. Aged in steel and French oak, it shows ripe blackcurrant, plum and a fine, structured tannin.
Description
Campo Alle Comete makes Oltresogno from Cabernet Sauvignon in the Maremma, the coastal part of Tuscany in the province of Livorno where the grape first proved itself in Italy and gave rise to the Super Tuscan wines. The estate, run by the Tenute Capaldo group, works this single Bordeaux variety on the warm, sea facing soils near the Tyrrhenian. The maritime climate ripens the Cabernet fully, lending dark fruit depth, while sea breezes and the diurnal temperature shift hold the acidity and the grape's natural firmness. Ageing runs across both stainless steel and French oak, six months in barrel, six in steel tank and six in bottle. The steel preserves the bright primary fruit, while the oak softens the tannins through gradual oxygen exchange and adds vanilla, cedar and a fine grain. The colour is deep ruby. The nose shows blackcurrant, plum and cherry over red currant, dark chocolate and a cedar and tobacco edge. The palate is full bodied and structured, with ripe fruit, firm well defined tannins, fresh acidity and a long savoury finish. Serve at 16 to 18 degrees, decanting ahead. It pairs with grilled and roast red meats, lamb and aged cheeses.
