Camino Romano is a single-variety Tinto Fino from Dominio Romano in D.O. Ribera del Duero, drawn from vines 15 to 30 years old. Cold soaking lifts the aromatics, and twelve months in used French oak frame ripe plum and cherry over firm structure.
Description
Camino Romano is made by Dominio Romano in D.O. Ribera del Duero, on the high plateau of Castilla y León, entirely from Tinto Fino, the local clone of Tempranillo. The fruit comes from a careful selection of vines between 15 and 30 years old. Ribera del Duero sits at high altitude, where hot days and cold nights create a wide diurnal range that ripens the grapes while preserving acidity and colour. Before fermentation the winery uses cold soaking, holding the must at low temperature to draw out aromas and colour from the skins with little tannin extraction, which keeps the wine fresh and perfumed. Ageing for twelve months in used French oak adds gentle structure and a measured spice frame through slow oxygen exchange, without the heavy vanilla of new barrels. The colour is deep and bright. The nose shows ripe plum, black cherry and red berries over liquorice and a light oak spice. The palate is medium to full-bodied, with firm but ripe tannin, fresh acidity and a clean savoury finish. Serve at 16 to 18 degrees and decant briefly. It suits roast lamb and grilled beef.
