Description
Camillo Donati Campai is a natural white from Emilia-Romagna, made from Malvasía and Trebbiano under the IGT Emilia designation. Donati is better known for his ancestral method sparkling wines, and this still wine is a departure, named after the Japanese word for a toast in honour of a friend. The wine is farmed organically and made naturally, and it is certified vegan, with no fining agents of animal origin. Malvasía brings gentle aromatics and Trebbiano the fresh acidity that defines whites from this part of northern Italy. At 10.5 per cent the wine is light in alcohol, which keeps it lively and easy to drink. Made without oak and with minimal intervention, it holds its primary fruit and a direct, unforced character. The colour is bright, and the nose is fresh and vibrant, with green apple leading over citrus notes of lemon and grapefruit and a light floral edge from the Malvasía. The palate is crisp, dry and vivid, with clear acidity and a clean, slightly savoury finish. It is a wine to drink young and cold rather than to keep. Serve at 8 to 10 degrees in a white wine glass. Good with white fish, shellfish, salads and lighter pork dishes.
