Description
Camille and Guillaume Boillot make this Volnay Premier Cru from the Champans vineyard, one of the village's most respected sites on the Côte de Beaune. Volnay is known for the most perfumed, delicate reds of the Côte d'Or, and Champans, on gentle mid-slope limestone and clay, gives wines with both elegance and a firmer frame. The shallow, stony soils drain freely and concentrate the Pinot Noir, while the cool continental climate preserves the high natural acidity that carries the wine. The estate farms sustainably. The wine is aged in oak barrels, where slow oxygen ingress through the wood firms the structure and adds gentle spice, while time on the lees builds a silky mid-palate, the oak kept in check so the vineyard's perfume leads. Expect a bright ruby red with red cherry, raspberry and a clear floral note of violet and rose, set against a savoury, earthy minerality. The palate is finely structured and fresh, with silky tannin, vivid acidity and a long, mineral finish. Serve at 16 to 17 degrees, decanted briefly. It suits roast duck, poultry and mushroom dishes.
