Description
Camille and Guillaume Boillot are a young Burgundy domaine with roots in two winemaking families of the Côte de Beaune. Saint-Romain lies inland and high above the main slope, one of the cooler, more elevated appellations of the region. The altitude and cool continental climate slow ripening and lock in acidity, so the Chardonnay here keeps a fresh, mineral cut rather than the fuller weight of the valley-floor villages. The wine is fermented and aged in French oak barrel on its lees, which softens the texture through the slow release of mannoproteins, while malolactic fermentation rounds the malic acidity into a gentler lactic character. Restrained oxygen exchange through the wood adds light vanilla and toast without dominating the fruit. The colour is pale gold. The nose is bright and floral, green apple and white peach over lemon and white flowers, and the palate is medium bodied and dry at 13 percent, with a fine seam of acidity and a subtle hazelnut and toast finish. Farming is sustainable. Serve at 11 degrees in a white glass.







Additional information
A good match for grilled or baked white fish and for roast chicken with herbs. The fresh acidity also suits scallops and crab, and lighter hard cheeses. Serve well chilled to show its cut.
