This village Puligny-Montrachet comes from the Les Enseigneres lieu-dit, farmed by Camille and Guillaume Boillot in the Cote des Blancs of Burgundy. Fifteen months in French oak give a Chardonnay of citrus, white flowers and creamy, stony depth.

Description
Camille and Guillaume Boillot carry two generations of Burgundy tradition into a young estate of their own. Les Enseigneres is a lieu-dit within the Puligny-Montrachet appellation, on the Cote des Blancs, where limestone and white stone soils shape a Chardonnay of finesse and tension. The village sits on gentle, well drained slopes, and the low vigour of the stony ground keeps yields modest and the fruit concentrated. The wine spends fifteen months in French oak barrels, where malolactic fermentation and lees ageing round out the acidity and bring a creamy, buttered weight, while the barrel lends a light toast and slow oxygen exchange for depth. The colour is bright yellow with green tints. The nose is delicate, leading on white flowers, lemon and white peach, with a nutty edge from the oak. The palate is fresh and layered, the fruit held by a firm mineral line that runs into a long, saline finish. Serve at 12 to 13 degrees in a large white wine glass.

Pour this with roast chicken, poached turbot or salmon in a butter sauce. The oak and mineral length also suit crab, seared scallops and a wedge of aged Gruyere or Comte.
