Description
Camille and Guillaume Boillot are a young Burgundy domaine built on two long winemaking lineages, Camille from Pommard and Guillaume from a family of vignerons in the Côte de Beaune. Champ Gain is a premier cru climat on the higher slopes of Puligny-Montrachet, where thin soils over hard limestone and good elevation give a taut, mineral style of Chardonnay with fine acidity. The cool continental climate and slow ripening preserve tension in the fruit. The wine is fermented and aged in French oak barrel on its fine lees, which adds texture through the slow release of mannoproteins, while partial malolactic fermentation rounds the acidity without erasing the wine's cut. Slow oxygen exchange through the wood lends restrained vanilla and toast rather than overt oak. The colour is pale gold with a green cast. The nose is precise, green apple and white peach over lemon, hazelnut and white flowers, and the palate is tightly built and dry at 13 percent, with a chalky, saline finish that reflects the limestone. Farming is sustainable. Serve at 11 to 12 degrees in a white Burgundy glass.







Additional information
Built for lobster, crab and scallops, and for richer fish such as turbot in a cream sauce. The mineral edge and acidity also carry roast chicken and nutty hard cheeses like aged Comté. Give it a little air and serve lightly chilled.
