Description
Camille and Guillaume Boillot are a young Burgundy domaine drawing on two established winemaking families in the Côte de Beaune. Limozin is a village lieu-dit in Meursault, set on the deep limestone and marl soils that give the village its characteristic weight and breadth. The moderate continental climate ripens the Chardonnay evenly while holding acidity in reserve. The wine is fermented and aged in French oak barrel, with time on the lees and stirring that release mannoproteins to build the rounded, creamy texture Meursault is prized for. Malolactic fermentation converts the firmer malic acid into softer lactic acid, adding a buttery note, and slow oxygen exchange through the barrel brings gentle vanilla and toast. The colour is bright gold. The nose shows ripe pear and green apple, then hazelnut, honey and toasted bread, and the palate is full and rounded at 13 percent, the oak carried by fresh acidity into a long, nutty, mineral finish. Farming is sustainable. Serve at 11 to 12 degrees in a wide white glass.







Additional information
Works with lobster and crab in butter and with meatier fish such as monkfish and cod. The creamy weight also suits roast chicken and aged hard cheeses like Comté and Gruyère. Serve lightly chilled to keep the texture open.
