Description
Camille and Guillaume Boillot are a young Burgundy domaine, Camille the fifth generation of a Pommard winemaking family and Guillaume from his own Côte de Beaune lineage. Les Clous is a Meursault lieu-dit on almost white, stony soils, a limestone-rich ground that gives finesse and a mineral cut rather than sheer weight. The moderate continental climate ripens the fruit steadily while holding acidity in balance. The wine spends fifteen months in used French oak barrel, chosen so the wood adds texture and slow oxygen exchange without the stronger vanilla and spice of new oak. Ageing on the lees releases mannoproteins that broaden the palate, and malolactic fermentation rounds the malic acidity into a softer lactic character. The colour is pale gold. The nose is bright, white peach, green apple and pear over hazelnut and white flowers, and the palate is medium to full and dry at 13.5 percent, creamy in the middle but carried by fresh acidity and a stony, saline finish. Farming is sustainable. Serve at 11 to 12 degrees in a white glass.







Additional information
Good with scallops, crab and lobster, and with fuller fish such as cod and monkfish. The creamy but fresh style also suits roast chicken and nutty hard cheeses like Gruyère. Serve lightly chilled rather than cold.
