Description
Camille and Guillaume Boillot are a young Burgundy domaine built on the knowledge of earlier generations in the Côte de Beaune. Blagny is a premier cru at the southernmost tip of Meursault, where the vineyards meet Puligny-Montrachet and the limestone soils turn especially stony. That thin, chalky ground and the cool continental climate give a firmer, more mineral style of Chardonnay with tight acidity. The wine spends fifteen months in French oak barrel on its fine lees, a long élevage that builds texture as the lees release mannoproteins, while malolactic fermentation softens the malic acidity into a rounder lactic character. Slow oxygen exchange through the barrel adds measured vanilla and toast. The colour is bright gold with a green tint. The nose is fine and delicate, ripe pear and white peach over hazelnut, honey and toasted bread, and the palate is full yet precise at 13 percent, the oak framed by a chalky, saline line that runs long on the finish. Farming is sustainable. Serve at 11 to 12 degrees in a white Burgundy glass.

Suits lobster and crab in butter and meatier fish such as turbot and monkfish. The mineral length also carries roast chicken and aged hard cheeses like Comté. Give it some air and serve lightly chilled.
