Camille and Guillaume Boillot make this Echézeaux Grand Cru from Pinot Noir on the famed limestone of the Côte de Nuits. Barrel aged and sustainably farmed, it is deep and savoury with red cherry, raspberry and a fine earthy minerality.
Description
Camille and Guillaume Boillot work within the Burgundian tradition, and this red comes from Echézeaux, a Grand Cru sitting just below the great vineyards of Vosne-Romanée on the Côte de Nuits. The Pinot Noir grows on shallow soils over limestone and marl, where the stony, well-drained ground stresses the vines and concentrates the fruit while the cool continental climate holds the natural acidity that defines fine Burgundy. The estate farms with respect for the land. The wine is raised in oak barrels, a portion new, where slow oxygen exchange through the staves builds structure and fine spice while extended lees contact rounds the texture, the oak measured so the site speaks rather than the wood. Expect a deep ruby red with red cherry, raspberry and dark plum, lifted by crushed rose and a savoury, earthy minerality drawn from the limestone. The palate is fine and layered, with silky tannin, bright acidity and a long, mineral finish that rewards cellaring. Serve at 16 to 17 degrees, decanted. It suits roast game, duck and mushroom dishes.
