This Boillot Corton Grand Cru comes from the Renardes vineyard on the great hill of Corton in the Côte de Beaune. Pinot Noir on iron-rich limestone, barrel aged, it is deep and structured with dark cherry, plum and a savoury, earthy depth.
Description
Camille and Guillaume Boillot make this Corton from the Renardes vineyard, on the eastern flank of the hill of Corton, the only red Grand Cru of the Côte de Beaune. Renardes sits on iron-rich, stony limestone soils that give Corton its reputation for power and a firm, savoury structure, more muscular than the softer reds of nearby villages. The shallow, well-drained ground concentrates the Pinot Noir, while the cool continental climate holds the acidity that lets these wines age for decades. The estate farms sustainably. The wine is raised in oak barrels, a portion new, where slow oxygen exchange through the staves polymerises and tames the firm tannin and adds measured spice, while extended lees contact fills out the texture. Expect a deep ruby red with dark cherry, plum and raspberry, set against a savoury, smoky, earthy minerality drawn from the iron-rich site. The palate is full and structured, with firm but fine tannin, bright acidity and a long, mineral finish built for the cellar. Serve at 16 to 18 degrees, decanted. It suits roast beef, game and mushroom dishes.
