Description
Domaine Camille and Guillaume Boillot is a sustainably farmed Burgundy estate, and this is their Bourgogne Côte d'Or, a 2023 Pinot Noir. The Côte d'Or designation is a step up from a plain regional Bourgogne: the grapes come only from the Côte d'Or, the limestone escarpment running from the Côte de Nuits down through the Côte de Beaune, rather than from outlying districts. That stretch of clay and limestone soils, with vines on gentle slopes, gives Pinot Noir a clearer savoury definition and firmer acidity than the basic appellation. Pinot Noir is thin-skinned and low in tannin, so the focus stays on fruit, perfume and structure rather than weight. The wine sees a measured period in barrel, the oak adding a little spice and rounding the texture while keeping the fruit fresh. Expect a medium ruby colour, a nose of red cherry and redcurrant with a floral lift and an earthy undertone, and a palate that is fresh, fine-boned and savoury through a clean finish. Serve at 15 to 16 degrees. It is well suited to duck, roast chicken and mushroom dishes.
