    Wilson & Morgan bottled this Cameronbridge single grain, aged 30 year old distilled in 1992, from cask 115087 and bottled at 51.5%. Just 235 bottles were filled. Founded in 1824 by John Haig, Cameronbridge is the oldest and largest grain distillery in Scotland. Water comes from Loch Leven, the mash from wheat, the spirit drawn off three column stills.

    It was drawn from continuous Coffey stills for a light grain spirit, for a delicate spirit that leans on the cask with age. Maturation in a sherry cask laid dried fruit over the oily grain. Mid age brings a deeper coconut and a buttery, dessert sweetness. Long ageing turns light grain into a deep, oily, dessert sweet whisky. The Haig distilling dynasty traces its roots in Scottish whisky back to the 1600s. The distillery sits at Windygates in the Kingdom of Fife, near the River Leven. Light grain spirit like this gains coconut and toffee from decades in active oak.

    At 51.5%, undiluted, it is deep and sweet. The Pedro Ximenez lends raisin, date and treacle over the sweet grain. The texture is oily and buttery, the sweetness coating. Toffee and vanilla see out a long finish. This is the grain behind Cameron Brig and Haig Club.
