    This is a Cambus single grain, chosen and bottled by Master of Malt, a 34 year old release distilled in 1990 and bottled at 47.2%. 259 bottles in all. Founded around 1806 by John Moubray, Cambus was a Lowland grain distillery that fell silent in 1993. Cambus was once one of the largest grain distilleries in Scotland.

    Distilled in continuous stills for a light, sweet grain spirit, building the gentle Cambus grain style. A wine or fortified cask shaped it, the fruit meeting the sweet grain. At this age it is rich and waxy, the sweet grain folded into a buttery, oily body. Maturation in ex-Bourbon wood suits the light, sweet grain particularly well. Alfred Barnard visited in 1885, noting six huge warehouses holding seventeen thousand casks. A fire destroyed the distillery in 1914; it was rebuilt and resumed in the late 1930s. Cambus was once one of the largest grain distilleries in Scotland. Most surviving Cambus was distilled in the late 1980s and early 1990s, before the doors closed.

    At a full 47.2% it is intense yet sweet. The Rum cask adds brown sugar and a tropical lift to the sweet grain. The texture is oily and buttery, the sweetness coating. A warming, sweet finish lingers. This is the deep, sweet grain of old Cambus.
