Description
This is a Cambus single grain, chosen and bottled by Signatory Vintage, a 30 year old distilled in 1991, from cask 104233 and bottled at 51.5%. 258 bottles in all. Cambus was a Lowland grain distillery on the River Devon in Clackmannanshire, founded around 1806 and closed in 1993. Cambus was once one of the largest grain distilleries in Scotland.
The spirit was run off the distillery's continuous column stills, to build a soft, sweet grain character. A refill American oak cask held it, building the sweet, oily grain character. Beyond twenty five years the grain grows deep and oily, coconut, butterscotch and crème brûlée over polished oak. Continuous distillation gives a light, clean spirit, so decades in oak drive much of the flavour. The light, sweet grain takes on a deep, oily richness over many years. The distillery stood near Alloa, in the old brewing and distilling country of the River Devon. With no new spirit since 1993, every bottle draws on a finite, dwindling stock.
At cask strength 51.5% it is full bodied. The ex-Bourbon gives butterscotch, coconut and cream. It is clean and sweet, the grain spirit shining through. It finishes clean, sweet and buttery. This is the deep, sweet grain of old Cambus.
