This Cambus was from the independent bottler Signatory Vintage, a 29 year old single grain distilled in 1991, from cask 34105 and bottled at 56.9%. The outturn was 388 bottles. Founded around 1806 by John Moubray, Cambus was a Lowland grain distillery that fell silent in 1993. Single grain Cambus is rare, mostly from independent bottlers, with the odd Diageo Special Release.
Distilled in continuous stills for a light, sweet grain spirit, building the gentle Cambus grain style. A sherry cask held it, the wood lending raisin and walnut. Long ageing brings a deep coconut, toffee and a mellow, polished oak. The slow loss of the angel's share concentrates the sweet, oily core over decades. In 1906 its grain was advertised as not a headache in a gallon, helping win the What is Whisky case. Closed in 1993, the site is now a Diageo cooperage beside the Blackgrange warehouses. The spirit was drawn off two continuous Coffey stills, the water from the Lossburn Reservoir.
At a natural 56.9% it is full and oily. The Oloroso brings dried fruit and a nutty depth over the sweet grain. Soft toffee and vanilla sit behind the sweetness. Crème brûlée and oak draw out the close. This is an old Lowland single grain of real character.
