This is a Cambus single grain, chosen and bottled by Berry Bros & Rudd, a 29 year old release distilled in 1991, from cask 103023 and bottled at 49.9%. Only 481 bottles were released. A lost Lowland grain distillery near Alloa, Cambus distilled from around 1806 until 1993. Cambus was once one of the largest grain distilleries in Scotland.

It was worked through continuous column stills from grain, for the light, sweet grain spirit Cambus was known for. Maturation in a sherry cask laid dried fruit over the oily grain. Long ageing brings a deep coconut, toffee and a mellow, polished oak. Decades in cask build a waxy, polished depth over the clean grain spirit. The light, sweet grain takes on a deep, oily richness over many years. The distillery stood near Alloa, in the old brewing and distilling country of the River Devon. With no new spirit since 1993, every bottle draws on a finite, dwindling stock.

At a hearty 49.9% it carries real weight. The Oloroso brings dried fruit and a nutty depth over the sweet grain. Soft toffee and vanilla sit behind the sweetness. The close is soft, dessert sweet over oak. This is the deep, sweet grain of old Cambus.
