Description
A Cambus single grain, selected and bottled by Sansibar matured to 28 year old distilled in 1991 and bottled at 47.7%. Only 232 bottles were released. Cambus, a silent grain distillery on the River Devon, made whisky from about 1806 to 1993. Water came from the Lossburn Reservoir, the spirit drawn off two continuous Coffey stills.
Distilled continuously in two Coffey stills from a grain mash, giving a clean, mellow grain whisky. Ex-Bourbon casks held the grain, soft oak that drives the sweetness. At this age it is rich and waxy, the sweet grain folded into a buttery, oily body. Grain whisky like this rewards very long maturation, the wood adding most of the character. Alfred Barnard visited in 1885, noting six huge warehouses holding seventeen thousand casks. A fire destroyed the distillery in 1914; it was rebuilt and resumed in the late 1930s. Cambus was once one of the largest grain distilleries in Scotland.
At a full 47.7% it is intense yet sweet. The ex-Bourbon gives sweet vanilla and a buttery coconut. A crème brûlée and a polished oak give it depth. A warming, sweet finish lingers. This is a rare single grain from a lost grain distillery.
