A Cambus single grain, selected and bottled by Signatory Vintage, aged 28 year old distilled in 1991, from cask 34112 and bottled at 58.4%. Just 476 bottles were filled. Cambus, one of Scotland's oldest grain distilleries, ran near Alloa from about 1806 until its closure in 1993. Water came from the Lossburn Reservoir, the spirit drawn off two continuous Coffey stills.
It was drawn from Coffey stills on Lossburn Reservoir water, for a delicate spirit that leans on the cask with age. Maturation in a sherry cask laid dried fruit over the oily grain. At this age it is rich and waxy, the sweet grain folded into a buttery, oily body. Long ageing turns light grain into a deep, oily, dessert sweet whisky. Cambus was founded around 1806 by John Moubray on the River Devon in Clackmannanshire, one of Scotland's oldest grain distilleries. It was one of the five grain distilleries that founded the Distillers Company Limited in 1877.
At a full 58.4% it is intense yet sweet. The Oloroso brings dried fruit and a nutty depth over the sweet grain. A crème brûlée and a polished oak give it depth. The finish is deep, oily and creamy. This is a rare single grain from a lost grain distillery.
