    A Cambus single grain, selected and bottled by Duncan Taylor, a 27 year old release distilled in 1991, from cask 1115679 and bottled at 55.8%. Just 71 bottles were filled. Cambus, a silent grain distillery on the River Devon, made whisky from about 1806 to 1993. Water came from the Lossburn Reservoir, the spirit drawn off two continuous Coffey stills.

    Distilled continuously in two Coffey stills from a grain mash, giving a clean, mellow grain whisky. A sherry cask wrapped the sweet grain in dried fruit and a nutty depth. Beyond twenty five years the grain grows deep and oily, coconut, butterscotch and crème brûlée over polished oak. Grain whisky like this rewards very long maturation, the wood adding most of the character. A fire destroyed the distillery in 1914; it was rebuilt and resumed in the late 1930s. Cambus was once one of the largest grain distilleries in Scotland.

    Bottled at a cask strength 55.8%, it is rich. The Oloroso brings dried fruit and a nutty depth over the sweet grain. The mouthfeel is oily, the coconut carried on a sweet body. A warming, sweet finish lingers. This is a rare single grain from a lost grain distillery.
