Description
Caledonian was Edinburgh's great grain distillery, built in 1855 near Haymarket and for decades the largest in Scotland. It made light, sweet grain whisky for blends until its closure in 1988, after which it was demolished, its 300 foot chimney left standing as a landmark. This private single cask, number 92569, was distilled in 1980 and has spent four decades in oak.
The light grain spirit, distilled continuously in a Coffey still, was filled into a single ex-Bourbon cask and left for forty years. Such long maturation turns a clean spirit deep and oily, the American oak drawing coconut, vanilla and a tropical fruit from the wood. Bottled at its natural 55.4 percent. Caledonian ran a single giant Coffey still, once described as the greatest still in Scotland, drawing its water from the Union Canal.
At forty years it is rich and waxy, coconut, toffee popcorn and grilled pineapple over old polished oak, the finish long, oily and sweet. A rare private cask from a vanished Edinburgh distillery, its profile fixed for good by closure. Few grain whiskies reach an age like this, the long rest turning a simple spirit into something deep and tropical.
