Description
Cabòries is a natural red from Ramon Jané Viticultor in D.O. Penedès, made in Les Gunyoles near Barcelona. Jané farms organically with all work done by hand, seeking a natural balance in the vineyard without chemical or synthetic products. The wine is built around the native red varieties Sumoll and Mandó, with a portion of the white grape Xarel·lo co-fermented in. Including a white variety in a red is an old field-blend practice that lifts aromatics and freshens the palate. Minimal intervention in the cellar, with native yeasts and little added, lets the local grapes and the site come through clearly. The wine spends only two months in oak, a light touch that settles it without adding wood flavour. At 12 percent alcohol this is a fresh, light-bodied red. The colour is bright cherry red, the nose offering red berries, cherry and red currant with a floral note of rose and white flowers and a touch of black pepper. The palate is juicy and low in tannin, with crisp acidity and a clean finish. Serve lightly chilled at 13 to 15 degrees. It suits charcuterie, roast chicken and lighter dishes.
