Ca' del Bosco makes Cuvee Prestige in the Franciacorta DOCG of Lombardy, Italy's leading region for traditional-method sparkling wine. It blends Chardonnay, Pinot Nero and Pinot Bianco from a vintage base with selected reserve wines, first vinified in steel to keep freshness and clarity. The second fermentation completes in bottle, then the wine spends around twenty-five months on the fine lees, which builds structure, texture and the biscuit and nutty character that mark the style. Finished as a dry Brut with a low dosage, it is precise and balanced.

The wine shows bright straw yellow with a fine, persistent mousse. The nose gives yellow apple, lime and grapefruit with vineyard peach and mango, over white flowers and light brioche. The palate has a very fine bead and lively acidity, with pear, pineapple and apricot lifted by almond, hazelnut and biscuit from the lees, closing elegant and structured. Serve chilled at 6 to 8 degrees in a white wine glass. It suits oysters, prawns and salmon canapes, pike-perch or sea bass in lemon butter, and seafood risotto.
