Description
Ca' Bianca Gavi is a dry white made from the Cortese grape in Piedmont, produced by the long established Ca' Bianca winery at Alice Bel Colle in the province of Alessandria. Founded in 1950, the estate farms around forty hectares around the cellar and works its vineyards with a light touch. Cortese is the classic white grape of the Gavi zone, prized for its high natural acidity and restrained aromatics. The fruit is picked to preserve freshness, then fermented at low temperature in stainless steel to keep the delicate fruit and a clean, precise line. There is no oak, so the wine stays bright and mineral. Expect a pale lemon colour and a nose of green apple, lemon and pear with a light floral note. The palate is dry and crisp, medium in body, with citrus and orchard fruit carried by fresh acidity and a faint almond bitterness on the close that is typical of the variety. The finish is clean and stony. Serve well chilled at 8 to 10 degrees.
