Description
By Ott comes from Domaines Ott, a Provence estate founded in 1912 and now part of the Roederer group. It is a Côtes de Provence rosé built mainly on Grenache, with Cinsault, Syrah and a touch of Mourvèdre. The grapes grow on shale and limestone soils that drain freely and reflect heat, while the maritime Mediterranean climate, cooled by sea breezes, keeps the fruit fresh and the colour pale. The fruit is hand harvested and sorted again at the cellar, then whole bunch pressed to draw a delicate, pale juice with little skin contact, the method behind the classic Provence style. A cool fermentation in stainless steel preserves the primary aromatics and the bright acidity. The wine is a pale colour reminiscent of a summer sunset, with a nose of strawberry and peach over white flowers and a saline note. The palate is dry, light and crisp, with red berry and melon fruit, citrus freshness and a clean, saline finish. Serve it well chilled at 8 to 10 degrees in a white wine glass.
