Philippe Butin makes this pale, perfumed Jura red from Trousseau, a delicate local grape, in the village of Lavigny. Fermented and aged eleven months in stainless steel, it keeps bright red-berry fruit, a floral edge and light savoury grip.

Description
Philippe Butin took over his family winery in Lavigny in 1981 and has since become one of the names defining the new generation of Jura. He works 5.5 hectares with a minimal-intervention approach, deliberately without certification so he can adapt to the vintage. This wine is made from Trousseau, one of the Jura's traditional red grapes, a variety that ripens late and gives pale, aromatic, delicately structured wines. The clay and limestone soils of the Côtes du Jura and the region's cool, continental climate keep alcohol moderate and acidity high. The wine is fermented and raised eleven months in stainless steel, an inert vessel that adds no oak and preserves the grape's bright, primary character and floral lift. The colour is light ruby, the nose offering wild strawberry, red cherry, rose petal, dried herbs and a touch of undergrowth. The palate is light and fresh, with fine tannins and a savoury, mineral finish. Serve lightly chilled at 14 to 15 degrees. It suits roast chicken, mushroom dishes and charcuterie, and can even be served slightly cool with lighter fish.
