Description
Burrito Fiestero Mezcal Cenizo is an artesanal joven mezcal from the northern state of Durango, made from wild Cenizo, Agave durangensis, that grows in the high country and needs twelve to fourteen years to mature. Durango is cenizo country, where the agave gives a fruity, almost creamy character with a sweet, burnt caramel edge, and this bottling leans into a soft, floral and fruity profile.
The piñas are pit roasted for seventy two hours over volcanic embers, crushed by axe or mechanical mill, fermented in wooden vats and double distilled in copper. The nose carries agave, peach, tropical fruit and a discreet wisp of smoke, while the palate brings sweet cooked agave, grilled pineapple and a buttery, popcorn like note over a silky texture. The finish is long with a mineral, smoky echo and balanced acidity, bottled at 40%.
