Sister release to the Honeyed Smoke & Spice in the same Cooper's Choice Golden Cut series, same bottler, same 50% bottling strength, same single-cask, non-chill-filtered presentation, but a different cask and a different finishing wine. Cask 0071 produced 300 bottles. The bottler's Peat Smoked Toffees label points to where the cask programme has taken the spirit: caramelised sugar character on top of phenolic smoke. Long maturation in American oak ex-bourbon, then a finishing pass in ex-Madeira casks. American oak from former bourbon barrels brings the lactone-driven vanilla and coconut profile into the spirit during the primary maturation, and the heavy char-toast layer on bourbon-cask wood is what generates the toffee-and-caramel notes the label calls out. The Madeira finish then layers oxidative fortified-wine character on top: Madeira's combination of estufa heat-ageing and decade-long cask life leaves stone fruit, baked apple and a tart acidic edge in the wood that transfers cleanly into a finishing pass. On a heavily peated Bunnahabhain spirit, the combined effect should be a layered sweet-and-smoky profile: vanilla and toffee from the bourbon underneath, baked stone fruit and a touch of acidic lift from the Madeira on top, with the heavy peat smoke threading through the whole thing as the structural backbone. The acidity helps stop the sweetness going cloying, which is the consistent risk with peat-plus-fortified-wine combinations. Natural colour, single cask.
