Murray McDavid's Mission Gold range is the bottler's upper tier, reserved for older single casks that warrant premium presentation. The line typically runs to small outturns with detailed cask programme transparency on each release. This 32 year old Bunnahabhain comes from cask 2003082, spirit distilled in 1991 and bottled in 2024 at 44.1% natural strength after a final period in a Sauternes wine cask.
Sauternes is the sweet white dessert wine of Bordeaux, made from Sémillon and Sauvignon Blanc grapes affected by noble rot. The wine's residual sweetness combined with its high acidity transfers a particular character into spirit during cask finishing: honeyed apricot, candied citrus, white floral notes and the noble-rot signature of concentrated stone fruit. On long-aged Bunnahabhain spirit that has already integrated with its primary cask through decades of maturation, the Sauternes finish layers a lighter wine character on top of the deeper underlying wood profile.
The 44.1% ABV after thirty-two years is the natural endpoint of long maturation rather than deliberate dilution. Spirit fills typically at 63.5%; over decades, evaporation through the cask staves draws down the alcohol and water content at rates dependent on warehouse humidity. The result on this bottle is a softly-drinking natural strength that carries the Sauternes finish delicately, with the long-aged Bunnahabhain spirit providing the contemplative oily base. Natural colour, non-chill-filtered, single cask.
