Description
Signatory Vintage is one of the longest-established independent bottlers in Scotland, founded in Edinburgh in 1988 and now operating from Edradour Distillery in the Highlands. The Cask Strength Collection is the bottler's flagship single-cask line, with releases drawn from individual casks and presented at natural strength without dilution. The Symington's Choice subline carries casks selected by a specific buying team and tends to land at the older, more premium end of Signatory's output. This 23 year old Bunnahabhain comes from cask 1438, distilled in 2001 and bottled in 2025 at 59.5% natural strength.
Maturation is in Oloroso sherry. At 23 years old, the cask has moved well past the integration window of mid-life sherry maturation and into the deeper register where spirit and wood have fused. The dried-fruit weight has concentrated through years of slow oxidative interaction with the wine-seasoned wood; the walnut and leather markers from the Oloroso run deeper; oak-spice presence intensifies through the long contact time.
The 59.7% strength holding after 23 years suggests storage in cool warehouse conditions with measured evaporation. Expect classic well-aged sherry Bunnahabhain: dense dried fig, dark walnut, polished old oak, a touch of leather and tobacco, all carried by the distillery's natural oiliness and underlying maritime salinity. Water releases the deeper aromatics. Natural colour, non-chill-filtered, single cask.
