The 21 Year Old Cask Strength runs alongside the 12 Year Old Cask Strength as Bunnahabhain's pair of annual cask-strength limited editions. The 21 sits at the older premium end of the range; the 2025 release uses 21 hand-selected casks, builds in 21 months of Pedro Ximénez finishing, and bottles at 53.1% natural cask strength. The numerical alignment is the distillery's nod to the age statement, and the long finish window is where the bottling earns its character.
The cask programme runs in two distinct stages. Primary maturation is in ex-Oloroso sherry butts, the same workhorse format that defines Bunnahabhain's house style. After twenty-one years in those butts, the spirit has fully fused with the wood and developed the deep walnut, leather and dried-fig character that long Oloroso maturation produces. The PX finish adds a layered sweetness on top: Pedro Ximénez grapes are sun-dried before fermentation, concentrating the must to near-syrup, and the cask wood carries that intensity as raisin, fig paste, treacle and chocolate-covered cherry into the spirit during finishing.
Distillery tasting notes for the 2025 edition cite chocolate cherries, roasted nuts and a gentle warming spice on the palate, with oak-spice depth and dried-fruit syrup running through. The Bunnahabhain coastal character holds underneath the dual-sherry weight. Natural oiliness, salinity from the Sound-side warehouses, the maritime air signature all keep the bottle from collapsing into pure dessert sherry. Limited release, natural colour, non-chill-filtered.
