Duncan Taylor's Octave range uses small ex-sherry casks, roughly 60-70 litres each, made by splitting and recoopering a standard sherry butt into eight smaller vessels, for short, intense finishing periods. The small format dramatically increases the wood-to-spirit ratio compared to a butt or hogshead, so a few months in an Octave cask can deliver as much wood influence as a couple of years in a full-size cask. Each Octave release runs to roughly 60-90 bottles. This 16 year old Bunnahabhain from cask 3848655 is a Brühler Whiskyhaus exclusive, finished in a Palo Cortado octave and bottled at 54.5% natural strength. Palo Cortado is the rarest of the major sherry styles, a wine that began life under flor as a Fino but lost the yeast veil partway through ageing, then completed maturation oxidatively like an Oloroso. The resulting wine carries the salinity and almond character of Fino with the depth and walnut richness of Oloroso, and the cask wood reflects that combination. In an Octave format, that wood signature transfers into the spirit with concentrated speed. On a 16-year-old Bunnahabhain that has already developed its mature spirit profile in a primary cask, the Palo Cortado octave finish brings a complex layered top note: salted almonds, dried apricot, hazelnut and a touch of the salt-sea quality that defines the wine. Beneath, the Bunnahabhain coastal oiliness reads through cleanly. The pairing is well-judged, Palo Cortado's saline edge complements rather than fights the Bunnahabhain house character. Natural colour, non-chill-filtered, single cask.
