Brühler Whiskyhaus is the trading name of Marco Bonn Whiskyhaus, a specialist whisky retailer and small-scale independent bottler based in Brühl near Cologne. The bottler's flagship A Dream of Scotland series carries the bulk of its single-cask releases, often dressed in the playful labels that have become a recognisable signature in the German indie scene. This 15 year old Bunnahabhain comes from a single Cream Sherry hogshead, bottled at 54.8% natural strength to an outturn of just 163 bottles. Cream Sherry as a cask type is unusual on the indie scene. The wine itself is a sweetened Oloroso-base sherry, blended with a proportion of Pedro Ximénez to soften the dry oxidative character of straight Oloroso into something richer and more dessert-leaning. The wood from a Cream Sherry cask therefore carries a layered residue, the nutty walnut and leather notes from the Oloroso component, plus the raisin and fig sweetness from the PX. In a 250-litre hogshead format the wood-to-spirit ratio is tighter than a 500-litre butt, so the cask transfer is more concentrated across fifteen years of maturation. The expected profile is a softer, sweeter take on classic sherry-matured Bunnahabhain. Where straight Oloroso would push walnut and tobacco, the Cream Sherry cask layers in dried-fruit syrup, baked dessert spice and a rounder mouthfeel. The unpeated Bunnahabhain spirit sits underneath, oily, mineral, lightly briny, giving the wine sweetness something with structure to sit on rather than dominate. Natural colour, non-chill-filtered, single cask.
